I actually like buffalo (bison) better than deer or beef ... but they are much harder to bring down and the ranchers tend to get upset when you shoot at them

My first experience with rare was about 9 years ago in Park City, UT. I had what they called a baseball steak, about 16 oz filet and round as a baseball. It was rare as could be. Didn't know what to think at first but after the first bite, I figured out what it is all about. Since then I don't go over med rare.
Damn good cut.
